3 medium carrots, peeled and chunked
fresh ginger
1 shallot, minced
3 tablespoons rice vinegar
1/4 cup canola oil
1 tablespoon dark sesame oil
1 tablespoon sugar
4 teaspoons miso
2 teaspoons mirin
3 tablespoons water
