like it hot? round the chili powders and cumin when measuring. Use two 15 oz canned beans any kind or more if you just love beans A serving is one bowl
Ingredients:
1 tablespoon extra virgin olive oil
1 medium onion chopped
1/2 sweet red pepper, chopped
1 teaspoons garlic, minced
1 pound ground turkey
1 1/2 tablespoons chili powder, (ancho)
2 teaspoons ground cumin
1/2 teaspoons chili powder, (chipotle)
2 tablespoons all purpose flour
2 tablespoons tomato paste
3 cups (24 oz.) stock, vegetable
2 cups beans, great northern, mature seeds, cooked, boiled, with salt
2 tablespoons cilantro, chopped
Directions:
1. heat oil over medium heat in large saucepan and add onion, red pepper, and garlic. Stir til barely softened - about three minutes.
2. Add turkey, cumin and both chili powders, cook over med-high heat til turkey is browned.
3. Stir in the flour and then the tomato paste.
4. Add white beans and enough stock to get the consistency you prefer.
5. Simmer about 15 minutes and garnish with cilantro.
