scrambled egg and veges in a tortilla with extra egg on the side! The turmeric gives the egg white a nice yellow color and a savory taste - it's also wonderful for those of us with arthritis!
Ingredients:
2 egg
1 teaspoon olive oil
1/4 cup onion, diced
1/4 cup red pepper, diced
1 cup spinach, torn
1/4 teaspoon turmeric
2 teaspoons cheddar, grated
1 tortilla
1 tablespoon salsa
Directions:
1. heat olive oil on medium heat in a non-stick pan and saute onion and pepper til they start to brown, add spinach and stir til wilted, add turmeric and stir til incorporated to the mix.
2. With a fork, beat the eggs in a small bowl and then add to the vege mix. Stir until nearly done and sprinkle with cheese. Stir until some of the cheese is directly on the pan and let it sit a few seconds so the cheese is heated and ideally a little browned as this enhances the flavor and is why you don't need tons of cheese!
3. Heat the tortilla 10 seconds in a microwave, top with the egg mix and ladle on the salsa. (add more salsa if you like, it's low cal and very healthy!)
