Jannid's Oven Roasted Potato Fries

these are so easy and so much tastier and healthier than fries you get through your window. We don't miss window fries at all. Do not use too much oil, just enough to coat.
Ingredients:
4 large baking potatoes
2 t olive oil
1 t garlic salt
Directions:
1. Heat oven to about 400 degrees.
2. Peel potatoes and cut in to long french fry shapes about the size of a finger. Smaller will get you browner and crispier fries, but I like them finger sized. Rinse under cold tap water and pat dry with a towel.
3. In a large bowl, mix the potatoes with the olive oil - just enough to coat - and sprinkle with a generous amount of garlic salt.
4. Spread the potatoes on a large baking sheet either non-stick or sprayed with Pam. Rather than over crowd the sheet use a second sheet or they will turn soggy.
5. Roast for about 35-40 minutes turning at the halfway point (and swapping the up and down sheets if you made the entire recipe and used two sheets) bake til golden brown. They will be crisp outside and light and fluffy inside.
6. Serve with fresh flaked sea salt if you prefer salty fries.
