Ingredients:
3 cup(s) all-purpose flour
1 teaspoon(s) baking soda
1 teaspoon(s) salt
1 tablespoon(s) pumpkin pie spice
1 teaspoon(s) pumpkin pie spice
2 cup(s) granulated sugar
1 can(s) pumpkin
4 eggs beaten
1 cup(s) canola oil
0 1/2 cup(s) orange juice
1 cup(s) dried cranberries
0 1/2 cup(s) pecans chopped
Directions:
1. Preheat oven to 350 deg.
2. Grease and flour 2 loaf pans and ladle batter into each.
3. Place first 5 ingredients (dry ingredients) in mixing bowl.
4. Mix next 5 ingredients (wet ingredients) in a smaller bowl.
5. Make a well in the center of the dry ingredients and stir in the wet ingredients. Stir only until dry ingredients are moist. Do not over-mix.
6. Ladle batter into each.pan.
7. Bake at 350 deg for 1 hour.
