Remember this moist and dense cakelike bar full of nuts and raisins and sold at the A and P markets?
Ingredients:
4 cups water
2 cups raisins
1 cup shortening
4 cups all purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon salt
2 eggs
1 cup chopped walnuts
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Lightly grease one 9 x 13 pan
3. Cook raisins and water for 10 minutes over medium heat.
4. Stir in theshortening.
5. Remove from heat and let mixture cool.
6. Combine flour, sugar,baking soda, ground cloves, ground nutmeg, ground cinnamon, groundallspice and salt.
7. Add flour mixture to the cooled raisin mixture andblend well.
8. Stir in the beaten eggs.
9. Add the chopped nuts (if desired).
10. Pour batter into prepared pan.
11. Bake at 350 degrees F (175 degrees C) for35 minutes, OR, until center springs back when lightly touched.
12. When cakeis cool, spread your favorite vanilla frosting on top.
