Jambalaya with Brown Rice

Brown rice adds nuttiness and fiber. Reduce or increase the spice amount to your taste.
Ingredients:
1 cup brown rice
152 g two andouille sausages, diced
14 oz tomatoes, diced, canned
1 green pepper, diced
1/2 sweet onion, diced
12 large shrimp, peeled and deveined
2 t cajun or creole seasoning
1 t olive oil
2 cups water
Directions:
1. Saute sausage, without oil, in skillet, until lightly browned, remove.
2. Warm oil in same pan. Saute onion and green pepper until soft.
3. In medium saucepan, add cooked ingredients to water, rice, tomatoes, and seasoning.
4. Stir, bring to very low boil and cook for 40 minutes.
5. Add shrimp and cook for 10 more minutes.
6. Remove from heat, and let set for 5 to 10 minutes.
