Ingredients:
1 lb bag long grain wild rice
1 lb sausage ( i use andouille for an extra kick)
4 chicken breasts, cooked and diced
8 oz can of tomato sauce
10.5 oz can of beef bouillon soup
10.5 oz can of french onion soup
1 stick of butter, cut into tablespoons
1 1/4 cup green bell peppers, chopped
1/4 cup fresh parsley, chopped
1/2 cup green onions, chopped
your favorite cajun seasoning....i like zataran's
dash of tabasco (optional, to taste)
cayenne pepper (optional, to taste)
Directions:
1. Mix all ingredients together (except for Cajun seasoning) in 2-guart greased casserole dish.
2. Sprinkle Cajun seasoning on top, be generous
3. Bake at 350 for 1.5 hours covered.
4. Stir every 15 mins.
5. *You can substitute shrimp for either the chicken or sausage.
