Ingredients:
1/2 cup(s) rolled oats
1/2 cup(s) low sodium chicken broth
1/2 cup(s) water
1/2 teaspoon(s) paprika
1 teaspoon(s) cajun seasoning
1 tablespoon(s) butter
1 teaspoon(s) cajun seasoning
2 tablespoon(s) onion diced
2 tablespoon(s) celery diced
2 tablespoon(s) bell peppers diced
2 tablespoon(s) tomato (fresh or diced in a can) diced
2 ounce(s) andouille sausage pre-cooked
2 ounce(s) shrimp (small) pre-cooked
Directions:
1. Cooking the cajun trinity:
2. Dice onion, celery and tomato (if fresh is used).
3. Heat skillet over medium heat, melt butter. Add vegetables, the one teaspoon of cajun seasoning. Sauté vegetables for about 8 minutes.
4. Add andouille sausage and shrimp to sautéing vegetables. Continue to sauté for about 2 more minutes until meats are heated through and vegetables are translucent.
5. Prepare oatmeal as per package instructions, using water/broth blend and adding paprika and cajun seasoning.
6. Combine, all ingredients and let stand for 2-3 minutes to cool and thicken. Add a couple splashes (or more) of tabasco or your favorite hot sauce to kick up the heat!
