Wonderful more authentic Jambalaya recipe...lots of complex flavors. Don't be turned off by the list of ingredients..it is WELLworth the effort. Serve with warm corn muffins or a loaf of crusty french bread. Makes a great New Years meal! Read more !!
Ingredients:
2 tbls. olive oil
1 lb. bonesless, skinless chicken breast, cut into chunks
1/4 thick sliced, smoked ham, cubed
1 lb. smoked sausage, preferably cajun style, sliced
1/2 lb. to 1 lb. of fresh shrimp, peeled and deveined
2 c. chopped onion
1 c. chopped celery
1 c. chopped red bell pepper
2 cloves minced garlic
2 cups of long grain rice
1 tsp. each salt, fresh ground black pepper, paprika
1/4 tsp. hot red pepper flakes or more if you like it spicy
1 1/2 tsp. dried thyme or 3/4 tsp. fresh thyme
2 crushed bay leaves
1/4 tsp. allspice
4 - 5 c. hot chicken broth
1 14 oz. can diced tomatoes, drained
rind of 1 lemon
Directions:
1. Heat olive oil in LARGE heavy skillet.
2. Fry chicken and ham in olive oil until well browned,remove from pan and set aside.
3. Fry sausage in same pan until browned, remove and set aside.
4. Saute onion, celery, red pepper and garlic in same pan until wilted about 5 minutes.
5. Stir in the rice and all of the seasonings and saute 3 to 4 minutes to coat rice grains with oil.
6. Add hot chicken broth to pan followed by the meats and stir to mix.
7. Cover and simmer over low heat just until the rice is barely tender, about 15 minutes.
8. Add the tomatoes, shrimp and lemon rind and remove from heat.
9. Let stand, covered, until shrimp is cooked and turns pink about 10 minutes.
