Very easy and hearty and feel-good meal in one pan. Love the veggies, but a little too spicy for me (next time I might even leave out the cayenne so I can enjoy the veggies more - of course, I use a zesty sausage, so I think that will be plenty of heat for me)! Read more !
Ingredients:
1 c turkey sausage
1 large onion, chopped
2 stalks celery, chopped
1 medium zucchini, thin sliced
1 small bell pepper, chopped
1 medium carrot, grated
1/2 t thyme
1/4 t cayenne
1 t salt
1/4 t black pepper (or mrs. dash)
3 garlic cloves, crushed
2 c cooked chicken, chopped
28 oz canned tomatoes w/ juice
2 c. chicken broth
1 1/2 c rice (i use a brown & wild rice blend that cooks in 15 minutes)
Directions:
1. Saute sausage in large skillet until browned
2. Add onion, celery, bell pepper and saute until tender
3. Add seasoning, including garlic, stir well
4. Add chicken, tomatoes, broth and rice
5. Bring to a simmer then cover and cook until rice is done, about 20 minutes.
