Ingredients:

Directions:

  1. Heat oil in large heavy pot over medium high heat. Add sausage and ham, sauté for about 5 minutes.
  2. Add onions, peppers, celery, salt, pepper, chili powder, and cayenne. Cook stiring often until soft, about 5 minutes.
  3. Add tomatoes, garlic, and bay leaves. Cook stirring for 2 minutes.
  4. Add rice and cook stirring for another 2 minutes.
  5. Add thyme and chicken broth to the pot. Bring to a boil and cover. Reduce to a simmer stirring occasionally for 30 minutes.
  6. Season shrimp with creole seasoning and add to the pot. Cook for 5 minutes.
  7. Remove pot from heat and let sit covered for 15 minutes longer.
  8. Add green onions and stir to combine. Remove bay leaves.
  9. Adjust salt and pepper according to taste.
