Jamaican Rice

A vegetarian compliment to any spicy entree.
Ingredients:
2 tablespoons olive oil
1 large red onion
1 red apple, cored and cubed
1 teaspoon curry powder
2 cups water
1-1/3 cups brown rice
2 teaspoons dark molasses or treacle
2 small banana, sliced
2 tablespoons unsweetened flaked coconut
Directions:
1. Heat oil in saucepan over medium heat.
2. Add onion and red apple; cook until onion is translucent.
3. Season with curry and stir in water.
4. Add rice and molasses, cover and cook until rice is tender and water absorbed.
5. Gently fold in banana and sprinkle coconut on top.
6. Heat through and serve.
