Jamaican Pork Stir-Fry

A new spin on pork. This is very easy, very quick, and somewhat spicy.
Ingredients:
1 tablespoon olive oil
1 (16 ounce) package stir fry vegetables (frozen)
16 ounces boneless pork chops (cut into thin strips)
2 teaspoons jamaican jerk spice
1 cup bottled plum sauce
peanuts (optional)
Directions:
1. In a wok or large skillet, heat oil over medium-high heat.
2. Add frozen vegetables; cook and stir for 5 - 7 minutes or until vegetables are crisp-tender.
3. Remove vegetables from wok and place in a covered serving dish.
4. Toss pork strips with jerk seasoning; add to wok.
5. Add more oil, if necessary.
6. Cook and stir for 2 - 5 minutes or until pork is no longer pink.
7. Add plum sauce to wok; return vegetables.
8. Gently toss to coat; heat through.
9. If desired, sprinkle with peanuts.
10. Serve over rice.
