I haven't tried this yet, but it sounds easy and interesting!
Ingredients:
6 boneless skinless chicken breasts, cut into 1-inch pieces
1 cup coconut milk
2 sprigs fresh thyme, minced
1 medium onion, chopped
1/2 teaspoon allspice
Directions:
1. place all ingredients in large heavy skillet.
2. simmer over low heat stirring occasional for 45 minutes or until chicken is tender.
3. serve over rice.
