Jamaican Chicken Curry Slow Cooker

Here's a healthy chicken curry for the slow cooker. Add some more veggies and stock to leftovers to make soup the next day.
Ingredients:
4 boneless chicken breasts, trimmed and cut into large cubes
1 medium onion, diced
1 orange or red bell pepper, cut in 1 dice
3 garlic cloves, minced
2 tablespoons minced fresh ginger
1 tablespoon canola oil
2 teaspoons curry powder
1 teaspoon allspice
1 teaspoon cumin
2 cups chicken stock
salt & pepper to taste
Directions:
1. Cook onion and pepper in oil until onion softens.
2. Add garlic and ginger and cook until fragrant.
3. Add spices and stir for 1 minute.
4. Put vegetable mixture into slow cooker crock.
5. Add raw chicken on top. (I normally would suggest browning meats before adding to slow cooker, but in this case it really doesn't help)
6. Pour chicken stock over all, stir, and cook on low for 5-6 hours.
7. Season to taste, and serve with rice and green veggies.
