A Jamaican friend of mine made these once and I loved them, so I decided to try to make them myself. I serve them with ketchup, salsa, or sourcream.
Ingredients:
2 cups all purpose flour
1 1/2 teaspoons curry powder
dash of salt
1/4 cup margarine, cold and cubed
1/4 cup shortening
1/3 cup ice water
2 tablespoons flour
1 small onion, diced
1 lb. ground beef
1 teaspoon curry powder
1 teaspoon thyme
1 teaspoon each salt and pepper
1/2 cup chicken broth
1/2 cup bread crumbs
1 egg, beaten with 1 tablespoon water
Directions:
1. To make dough: combine flour, curry powder, salt.
2. Cut in margarine and shortening until it resembles course crumbs.
3. Pour in ice water in to crumbs and mix with hands until pliable dough forms. Wrap dough in plastic wrap and let rest.
4. To make filling: cook beef and onion until done.
5. Stir in flour, curry powder, thyme, salt and pepper. Add in broth.
6. Sprinkle with bread crumbs and combine well.
7. Simmer until broth is reduced.
8. To assemble: sprinkle workspace with flour, roll dough out til about 1/4 flat, cut with round cutter or cut into rectangles til dough is used.
9. Fill each piece leaving edges free.
10. Brush egg mixture onto edges and fold over, crimp with floured fork.
11. Bake for 30 minutes in a 400 degree oven, serve hot.
12. These reheat nicely!
