Every time I make this...It disappears...It's an instant favorite for all...
Ingredients:
1 1/2 cup self rising flour
3 tbsp finley chopped green bell pepper
2 tbsp finley chopped red bell pepper
1 finley chopped jalapeno pepper
1 cup frozen corn niblets (thawed)
1 well beaten egg
1/3 cup buttermilk
1 cup shredded sharp cheddar cheese (divided)
Directions:
1. Preheat oven to 425 degrees F.
2. Mix all ingredients together (except cheese). This is not a wet batter so don't be alarmed if it's dry.
3. Put half of mixture into a medium sized loaf pan.
4. Cover with 1/2 of the cheese.
5. Put second half of mixture on top of the cheese.
6. Cover top with remaining cheese.
7. Bake for 25-30 minutes.
