Jalapeno Chipotle Turkey Salad

I ended up cooking two turkeys this Thanksgiving. One on Thursday (Adobo Turkey with Red Chile Gravy) and on Saturday I served a Salted Roast Turkey with Herbs and Shallot-Dijon Gravy…recipes coming. From Saturday’s turkey, I had some leftover turkey – didn’t we all? Read more ? I'd had my fill of tasty turkey with sides, so I wanted to make something different and yummy to use as either a sandwich stuffer or a mound of goodness for dipping. Out of that desire came this delicious turkey salad. Let it sit in your fridge for at least an hour...it makes it even better and let's the flavors meet and infuse....always a good thing.
Ingredients:
3 cups of turkey (light or dark), cubed – i used white because i’m using the dark for a posole or chili tomorrow
1/2 cup green onions, chopped (whites and greens) – can use white, yellow or red onion
1/2 cup celery, chopped
2-3 jalapeno peppers, stemmed and seeded (my jalapenos were large – i had about 1/3 cup chopped or so and they weren’t really hot – so adjust accordingly for your taste. i will try serranos the next time out)
1/3 cup of red bell pepper, chopped
1/3 cup chopped cilantro (or sub italian parsley if desired)
dressing
3/4 cup plain yogurt
2 tsp. of mayo (i like duke’s or hellman’s)
1 heaping teaspoon of chipotle powder (if you aren’t so inclined, you could used a smoked paprikabut the chipotle powder really shines here)
1/4 tsp garlic powder
1/4 teaspoon salt
1/2 teaspoon red pepper flakes (optional)
cracked black pepper to taste
Directions:
1. Cube the turkey and chop the veggies.
2. Stir together the yogurt, mayo, chipotle powder, salt, black pepper, red pepper flakes (if adding) and garlic powder.
3. Add the yogurt mixture into the chicken and stir together completely.
4. Add all the veggies and the cilantro and stir until mixed.
5. Adjust for salt...you may have to add a little here.
6. Chill for an hour before serving to marry the flavors.
7. Note: I served my plate tonight with cukes, radishes and some slices of olive bread. Delish!

9. * Makes about 6 sammies – could serve with chips of your choice.

11. **Or mound chicken salad in the center of a big platter. Serve-with suggestions:
12. ~Toasted bread slices of choice – I use EV olive oil to paint the bread before toasting.
13. ~Pita or flatbread, warmed and torn or cut into pieces
14. ~Lavash
15. ~Pepperoncini peppers (love 'em and always have them on hand)
16. ~Olives (Your fave, but I love stuffed olives w/ garlic, feta, blue cheese and/or almonds)
17. ~Cucumber slices
18. ~Trimmed radishes (can serve them with softened unsalted butter and sea salt...or any assortment of flavored butter).
19. ~Various crackers...I like hearty, thick crackers with seeds
20. ~Seedless red grapes
21. ~Apple slices (I like Granny Smith for their tart crispiness)...or use your fave
22. ~Grape Tomatoes
23. ~Toasted whole almonds or nuts of choice.
24. ~Any cheese you might like...a Brie would work great here
