If you prefer more heat use the whole packet of taco seasoning. For less heat substitute shredded cheddar cheese for the jalapeno-monterey jack cheese. Serve either as a side dish, or an appetizer with tortilla chips for dipping.
Ingredients:
2 cups refried pinto beans
1 1/4 ounces taco seasoning mix
3 green onions, thinly sliced
2 jalapeno peppers, seeds removed and minced
8 ounces cream cheese, room temperature
1 cup jalapeno-monterey monterey jack cheese, shredded
Directions:
1. Preheat oven to 350 degrees.
2. Combine the 15 ounce can of refried beans, half of the taco seasoning, green onions, jalapeno peppers and cream cheese.
3. Pour into a greased 9x9 baking dish. Sprinkle with the shredded jalapeno=monterey jack cheese.
4. Bake 350 degrees, 30 minuites, until hot and bubbling.
5. Serves 4-6 as a sidedish or 10 as an appetizeer.
