Jack's Berry Muffins

This is a great, healthy, after school snack for your kids! You can freeze the muffins and put in lunches for a treat, too. You can use frozen berries, too - just thaw a little under cold water. We use almost a whole small package of Trader Joe's frozen mixed berries. Let me know what you think!Enjoy!
Ingredients:
2/3 cup sugar
2 eggs
1/2 cup natural applesauce
1 1/2 whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon vanilla (optional)
1 1/2 cups mixed berries (blueberries, raspberries, strawberries, etc.)
Directions:
1. Preheat oven to 425 degrees.
2. Lightly spray muffin pan (mini muffin pan works, too!) or use paper liners. Combine sugar, eggs, applesauce, vanilla.
3. Add flour, baking soda, cinnamon.
4. Slightly smash berries and add to mix.
5. Pour mix into muffin tin (fill about 2/3)and bake for 10-15 minutes.
6. Cool completely and save as a healthy snack for after school or anytime of the day!
