Italian Zucchini Casserole

I got this recipe from a friend. It is a good way to use zucchini up.
Ingredients:
3 medium zucchini, sliced
3 tablespoons olive oil
1 medium onion
1 (28 ounce) can diced tomatoes
1 tablespoon fresh basil
1 1/2 teaspoons minced fresh oregano
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 1/2 cups dry bread stuffing mix
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese
Directions:
1. In a large skillet, cook zucchini in 1 tablespoons olive oil; drain and set aside.
2. In same skillet saute onion,and garlic.
3. Add tomatoes, basil, oregano, garlic salt, and pepper. simmer for 10 minutes.
4. Place in a baking dish and gently stir in zucchini.
5. Top with stuffing and Parmesan cheese.
6. Bake at 350°F for 20 minutes covered.
7. Uncover and sprinkle with mozzarella cheese and bake 15 minutes longer.
