Italian Turkey Meat Loaf

Ingredients:
1 1/4 pounds ground turkey breast
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
2 large garlic cloves, minced
1 large egg, lightly beaten
2 tablespoons tomato paste with basil, garlic, and oregano
1/4 teaspoon salt
1/4 cup italian-seasoned breadcrumbs
cooking spray
1/2 cup (2 ounces) shredded mozzarella-asiago cheese blend with roasted garlic
1/2 cup plus 2 tablespoons warm marinara sauce
Directions:
1. Preheat oven to 375°.
2. Combine first 7 ingredients in a large bowl. Shape turkey mixture into a loaf; place into an 8 x 4-inch loaf pan coated with cooking spray.
3. Bake at 375° for 35 minutes; sprinkle cheese over meat loaf. Bake an additional 10 minutes or until a thermometer inserted in center of loaf registers 160°. Let stand 5 minutes; cut into 10 slices. Serve with warm marinara sauce.
