Italian Tuna Casserole

Nice casserole adapted from Rachel Ray
Ingredients:
10 ounce frozen chopped spinach
16 ounce pasta
1 tbl extra virgin olive oil
2 tbl smart balance
1 medium onion
5 garlic cloves
3 tbl flour
1 1/2 cups chicken stock
2 cups skim milk
1 tbl hot sauce
1 tsp mustard
12 ounce tuna in water
4 ounces romano cheese
Directions:
1. Microwave frozen spinach for 6 minutes
2. Cook pasta
3. Heat skillet with EVOO and butter. Add Onion and garlic for 5 minutes. Sprinkle flour and wisk in stock. Wisk in milk and bring to a bubble. Reduce heat add mustard and hot sauce. Simmer 2-3 minutes, add spinach.
4. Preheat broiler.
5. Add tuna and pasta.
6. Transfer to casserole dish, top with cheese and broil for 2 minutes.
