These are quite chewy. And delicious!
Ingredients:
3 eggs
2 cups (500 ml) powdered (confectioner's) sugar
2 cups (500 ml) all-purpose flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) vanilla or almond extract
1/2 tsp (2 ml) ground cinnamon (optional)
Directions:
1. Beat the eggs and sugar until fluffy and very light in color. Add the flour and baking powder gradually while the beater runs slowly, followed by the vanilla and optional cinnamon. Add a little more flour if the dough is sticky.
2. Roll the dough on a lightly floured surface to form logs about 1/2-inch (1 cm) in diameter. Cut into 2-inch (5 cm) lengths and place on greased cookie sheets. Bake in a preheated 350F (180C) oven until lightly browned, 10 to 12 minutes. Cool on wire racks before serving. Makes about 2 dozen.
