Italian Style Mixed Salad

This is an old woman's weekly recipe, I make it a lot during the summer months. It is a bit like a roasted vegetable salad. I use bottled Italian dressing, but you can make your own and use it if you prefer.
Ingredients:
125 g green beans
125 g button mushrooms
12 small onions
1 green pepper
2 carrots
1 small cauliflower
1 small eggplant
2 stalks celery
1/4 cup oil
1/2 cup italian dressing
1/4 cup olive oil
1 garlic clove, minced
2 teaspoons prepared mustard
2 teaspoons sugar
Directions:
1. Trim and string beans, cut into 5cm (2in) lengths. Wash mushrooms, and slice: quarter onions: remove stalk from pepper, cut into strips: peel carrots, cut diagonally into 2.5cm (1 in) chunks: divide cauliflower into florets: cut unpeeled eggplant into 2.5
2. (1 in) cube: cut celery diagonally into 2.5 (1in) slices.
3. Saute vegetables in hot oil for about 5 minutes and put into a large salad bowl.
4. Add dressing and toss lightly.
5. TO MAKE DRESSING:.
6. Combine all ingredients in a screw top jar, shake to combine well.
