Ingredients:
6 medium tomatoes
3 pkgs frozen chopped spinach, thawed & drained
1 medium onion, diced
2 cloves garlic, minced
1 egg, beaten
1/3 c parmesan cheese
1/4 c dry bread crumbs
4 oz part skim mozzerella chesse, shredded
1 tbs italian seasoning
1/4 t red pepper flakes
3 tbs seasoned bread crumbs
4 oz part skim mozzerella chesse, shredded
2 tbs butter, diced
Directions:
1. Cut tops off tomatoes and scoop out seeds. Season inside of tomatoes with salt and pepper. Mix next 9 ingredients and pack tomatoes tightly. Place in greased casserole.
2. Sprinkle seasoned bread crumbs, shredded mozzerella and diced butter on top.
3. Bake, uncovered, for 25-30 minutes. Broil 2 minutes to allow tops to slightly brown.
