Italian Sausage Soup

A nice low fat, low cal hearty soup
Ingredients:
1/2 lb bulk sweet italian sausage
2/3 cup long-grain white rice
6 cups low-sodium or regular beef broth
1(15 oz) can navy beans, rinsed and drained1(15 oz) can diced tomatoes
1/4 teas ground black pepper
1 (10oz) box frozen chopped spinach, thawed, drained and squeezed dry
Directions:
1. Cook sausage over medium heat in a soup pot until the meat is browned and crumbly
2. Drain excess fat
3. Add rice,broth,tomatoes and pepper to pot
4. Bring to a simmer
5. Cover and cook 12 to 15 minutes or until rice is tender
6. Stir in spinach; let simmer for a few minutes
