Salad with mozzarella, roasted peppers, black olives and artichokes
Ingredients:
6 cups raw spinach
30 jumbo black olives (about 1 can), sliced in half and drained
1 can artichoke hearts (packed in water), drained
1 cup canned roasted red sweet peppers, (packed in water), drained and sliced
6 oz ciliengine (small fresh mozzarella balls), cut in half
Directions:
1. Makes sure all ingredients, except spinach, are cut into bite sized pieces.
2. Divide everything equally between 4 bowls.
3. Serve with your favorite dressing.
