Italian Rice Salad W Vegetables And Herbs

Ingredients:
3 c hot cooked brown or white rice
2 tbls lemon juice
2 tbls olive oil
1 garlic clove, minced or pressed
1/2 tsp dried oregano
1/2 tsp dried rosemary
1/2 tsp black pepper
1/2 tsp salt
1 small zucchini, julienned or grated
1 small yellow squash, julienned or grated
1 medium tomato, seeded and chopped
1tbls grated parmesan cheese
Directions:
1. Place the cooked rice in a large bowl.
2. Combine the lemon juice, olive oil, garlic, oregano, rosemary, pepper, and salt in a small jar with a lid.
3. Shake well and pour over rice.
4. Toss lightly.
5. Cover and let cool.
6. Stir in zucchini, squash, tomato, and Parmesan cheese.
7. Adjust seasoning.
8. 105 calories per serving.
