Italian Potato Salad (Insalata Di Potate)

Very quick recipe with NO MAYONNAISE. I am always looking for tasty ways to make potato salad without a lot of oil or mayonnaise. Lite italian dressing can be used in place of the full fat dressing. One hour chill time not included. This comes from a Boston Massachusetts community cookbooks entitled The North End Union Italian Cookbook.
Ingredients:
1 lb potato, cooked, diced, chilled
1 stalk celery, washed, diced, chilled
1/2 cup diced pared cucumber
1/2 cup diced olive
2 tablespoons minced onions
3/4 cup italian salad dressing
1/4 teaspoon dried oregano
Directions:
1. Toss lightly together the first five ingredients.
2. Blend together the dressing and oregano and gently coat the potato mixture completely.
3. Cover and chill 1 hour.
