Ingredients:

Directions:

  1. In a zip lock bag, add rub ingredients, close bag and pound until powdery and if you want pasty.
  2. Cut meat open like a book, horizontally,
  3. Make slits in meat and stuff garlic slices into them
  4. Drizzle olive oil over meat and coat with rub mixture and then rub into meat a little,
  5. Close meat and tie with cooking twine
  6. Make slit on top, side and underneath and stuff more garlic slices
  7. Drizzle all outside with olive oil
  8. Rub more rub mixture over meat (don't be light handed)
  9. Put meat in crock pot
  10. Cut carrots and potatoes (cubed into quarters) (Do not use a quick cook potatoe as they will fall apart)
  11. Place carrots and potatoes around meat
  12. Optional: 1-2 large onions sliced
  13. Drizzle olive oil around carrots & potatoes
  14. Season with salt, pepper, paprika, thyme, garlic
  15. In mixing bowl mix broth, paste & garlic powder to well blended,
  16. Pour over meat
  17. Cover, cook at high for 3 hours
  18. Lower to low for 2-3 hours more
  19. Remove meat, veggies & potatoes
  20. Pour juice into sauce pan, skim off fat
  21. Take about 1-2 cups out and mix with cornstarch or tapicoa starch,
  22. Slowly whisk back into sauce pan, and stir till boiling & thick
  23. If too thick, add some milk or water till desired consistency
