Italian Pork Patties

Ingredients:
50 g fresh breadcrumbs
500 g pork mince
50 g parmesan cheese
2 tablespoons parsley (chopped)
1 garlic clove, minced
1 lemon, zest of
low-fat cooking spray
Directions:
1. Place breadcrumbs in a mixing bowl and moisten with 2 tablespoons cold water, add mince, parmesan, parsley, garlic and lemon zest. Season well and mix well. Shape into 4 large flat patties.
2. Heat a pan with low fat cooking spray and cook the patties for 7 mins per side until they have a golden crust and are cooked through.
