Italian Polish Portuguese Taquitos

How can that be? I cheat. This is a seriously easy, fun and delicious “sorta Mexican” treat. You could make this the center of a meal but mostly its snack food, served with salsa, frijoles, guacamole, sour cream and like that. Read more . I got the idea from a friend who likes making chorizo Taquitos. So I took Taquitos to the Mediterranean. Okay, Poland isn’t on the Med; hay, I like the sausage. Don’t get too tricky here but have fun, Moi saying don’t get too habile, sorry. Joe, why not try this with a spicy German sausage? Just cook the sausage a bit before you slice it into strips. Ingredients:
• one or two 5” (13cm) pieces of the sausage (your choice) you want to wind up with 12 x 5” strips of sausage about the width of your little finger.
• 12 corn tortillas
• good oil for the frying
• salt and fresh ground pepper
Directions:
1. 1. Slice the sausage into strips 5” long and about the thickness of your (my) little finger. If you’re using “raw” sausage cook it a bit to firm it up before slicing.
2. 2. Warm up the tortillas so you can roll them without them breaking.
3. 3. Heat up about 2” of cooking oil pretty darn hot. (350 – 375 degrees F)
4. 4. Rig up something to drain the Taquitos on when cooked (I always forget this).
5. 5. Roll the tortillas around the sausage strips and hold them in the hot oil with your super tongs until they hold their shape.
6. 6. Fry, turning two or three times until golden brown and crispy.
7. 7. Drain and serve.
8. Garnish any old way you like. Guacamole and sour cream is my favorite but here you can go crazy. Goza la vida! (Enjoy life!)
