Ingredients:
12 oz perch
1 tsp olive oil
1 tsp oregano
4 oz diced tomato
2 tbsp garlic, minced
1/4 cup onion
6 black olives, sliced
2 tbsp parmesan cheese, grated
Directions:
1. Saute onion in oil until tender. Add garlic and saute one minute. Add oregano and tomatoes. Simmer 5 minute. Put sauce and fish in baking dish and bake for 15 minutes.
