Italian Pepper, Potatoes and Eggs

A south Jersey staple. Serve as a sandwich on a hard, crusted roll or as a side dish.
Ingredients:
2 -3 white potatoes, chopped in small pieces
2 green peppers, chopped in pieces
1 onion, diced
2 eggs, beaten
salt and pepper
1/8 teaspoon sugar
canola oil
Directions:
1. In a large frying pan, cook white potatoes and green peppers in oil until tender adding salt, pepper and sugar.
2. When vegetables are tender, add the 2 beaten eggs and stir until egg is cooked. Serve with hot sauce on the side if desired.
