Italian Parmesan Potato Wedges

Simple, delicious potato wedges perfect as a side for meatball subs, or other Italian sandwiches.
Ingredients:
4 large baking potatoes, wedged
1/2 cup quality olive oil
2t fresh italian herbs(basil, oregano, flat leaf parsley, etc), finely minced
2 cloves garlic, minced
2/3 cup fresh parmesan cheese, finely grated
kosher or sea salt and fresh ground black pepper
Directions:
1. Combine all ingredients except potatoes and cheese in large zipper type bag or whisk in large bowl.
2. Add potatoes and toss to coat.
3. Place on baking sheet sprayed with non stick spray.
4. Place potatoes on tray in single layer.
5. Top each wedge with Parmesan.
6. Bake at 425 for about 25 minutes.
7. *As mentioned above, these are great with Meatball subs, which I have posted, and can be baked at the same time as the meatballs :)
