Italian Mushroom Soup

This is a great soup to start an Italian meal. It is also a great lunch when served with a salad. Super fast and easy to prepare.
Ingredients:
1 teaspoon olive oil
1/2 cup finely chopped onion
1/4 cup chopped fresh italian parsley
3 garlic cloves, minced
2 lbs assorted fresh mushrooms, sliced
2 14 1/2 oz cans chicken broth
1/2 teaspoon salt
1/2 cup sour cream (can use non-fat)
Directions:
1. In Dutch oven or large saucepan, heat oil over medium heat, add onion, parsley and garlic and cook until onion is tender, approx. 2 minutes.
2. Add Mushrooms, broth and salt. Bring to a boil over medium high heat. Cook and stir for about 5 minutes.
3. Reduce heat to low and simmer for 10 minutes
4. Stir in sour cream and serve immediatly.
