What could be less Italian than grits? Fried grasshoppers maybe. My paternal grandfather, being 100% old country Italian, and having gotten married and raised a family in Fairmont West, by God, Virginia, must have done something Italian with grits. Read more . I live in Samoa and the only way to get grits is to bring some back in my luggage, When I go to the US, or have a friend drop a few bags in one of the ocean containers I bring in from time to time. I love grits. Do not remember the first time I had them; baby food most likely. I am also fond of Italian. I recently acquired a small stash of grits and wanted them Italian style. Thus, Italian grits. The servings are small cause grits are hard to come by. You want more, knock yourself out.
Ingredients:
• 1 cup of water.
• 1/4 cup albers grits.
• 1/4 tsp salt
• 1 tbs butter.
• 1/4 tsp oregano.
• 1/4 tsp basel.
• 1 tbs grated parmesan or romano cheese. i do not buy grated parmesan or romano cheese. i buy blocks and grate it as needed.
• a dollop of sour cream.
Directions:
1. 1. Make the grits in the usual way, using everything but the cheese & sour cream.
2. 2. When the grits are ready, add the grated cheese and stir gently until combined.
3. 3. Garnish with a dollop of sour cream.
4. 4. Serve.
