This is a good chili on a cold day and served with a crusty homemade Italian bread. We will have this at the Super bowl party Sunday.
Ingredients:
1 pkg. (19.76 oz.) italian sausage links.
1 cup chopped onion.
3 celery ribs, cut into 1/2 pieces.
1 each large sweet red, yellow and green peppers, cut into 1 pieces.
3 cloves garlic, crushed
3 tbsp. olive oil.
3 cans (14-1/2-oz.) italian recipe stewed tomatoes
1 can (16-oz.) dark red kidney beans rinsed and drained.
1 can (15-oz.) butter beans, rinsed and drained.
1 can (6-oz). tomato paste
3/4 cup sliced black olives
1/4 cup cream sherry
1 tbsp. chopped fresh basil
1-1/2 tsp. baking cocoa
1/2 tsp. ground cayenne pepper
Directions:
1. Grill sausage according to pkg. directions.
2. Cut into half moon slices and set aside.
3. In Dutch oven, sauté onions, celery, sweet peppers and garlic in olive oil until tender.
4. Add sausage and remaining ingredients, bring to a boil.
5. Reduce heat and simmer 20 minutes or until flavors are blended.
6. TIP: Sprinkle chili with grated Asiago, Romano or Parmesan cheese.
