Italian Chicken Salad

An easy summer dinner.
Ingredients:
1 whole chicken breast (about l lb.)
4 cups salad greens, cut in bite size pieces
1 cup cherry tomatoes, halved
1 small red onion, sliced into rings
1/2 cup pitted ripe olives
1/4 lb salami, cut unto julienne strips
1/4 lb mozzarella cheese, cut into julienne strips
2 tablespoons parmesan cheese, grated
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon dry mustard
1/4 teaspoon pepper
2 garlic cloves, minced
Directions:
1. Place chicken breast, skin side-up, in ungreased 9x9-inch pan; cover tightly.
2. Cook in 350°F oven until done, about l hour.
3. Carefully remove skin and bones and refrigerate chicken until cold.
4. Cut into julienne strips.
5. Prepare garlic dressing.
6. Toss with greens, tomatoes, onion and olives.
7. Arrange chicken salami and cheese on greens.
8. Garlic Dressing: Shake all ingredients in a tightly cover jar.
