Quick, refreshing, Mediterranean style salad than can be easily adjusted
Ingredients:
2 medium roma tomatoes, cubed
1 lb english cucumber, cubed
1/2 medium red onion, cubed
2 scallions, finely sliced
3 tbsp flat leafed parsley, finely minced
juice of 1 lemon
2 or 3 tbsp evoo
3/4 tsp sumac powder
salt and pepper to taste
optional
2 tbsp tahini - for the dressing
drained chickpeas
crumbled feta
rough chopped kalamata olives
anchovies
cubed red/yellow/green bell pepper.
fresh minced mint
fresh minced dill
Directions:
1. In a small bowl, whisk EVOO, Sumac powder, (tahini?), lemon juice, and parsley.
2. Toss vegetables in a bowl, drizzle dressing over veggies, and lightly toss again.
3. Serve with some pita bread or good Italian hard bread.
