This version is simple, clean cut, fresh and quick. It comes from my Israeli husband and is the Be'er Sheva style.
Ingredients:
1 tomato
1 cucumber
1/4-1/2 red onion
1/4-1/2 cup lemon juice
1 -2 tablespoon extra virgin olive oil
salt
pepper
Directions:
1. Dice vegetables.
2. Add all ingredients to a bowl.
3. Mix.
4. Serve as is or chill for no more than 10 minutes.
5. Note: If preparing in advance DO NOT add olive oil and lemon juice until you are about to serve.
