This is a very flavorful bean salad that I tried once and fell in love with. Prep time depends on how much effort you want to put into it.
Ingredients:
6 cups cooked black beans
3 cups cooked corn
1/4 cup chopped cilantro
1 chopped red bell pepper
8 scallions, chopped
1 cup italian dressing
2 teaspoons cumin
1/2 tablespoon black pepper
1 tablespoon salt
2 teaspoons dried oregano
2 limes, juiced
Directions:
1. Mix all ingredients in large bowl.
2. Let rest for 2 hours under refigeration before serving.
