Iron Skillet Sweet Taters

Cooking in an iron skillet is a good way to get extra iron in your diet. I cook in one often as I am borderline anemic.
Ingredients:
1 cup pancake syrup
1/4 cup butter
8 cooked sweet potatoes
10 -12 large marshmallows
Directions:
1. Preheat oven to 400 degrees.
2. Melt butter and syrup in an iron skillet.
3. Add the cooked sweet potatoes (may use whole or slice). Cook for about 10 minutes (turn often to glaze).
4. Remove from heat.
5. Arrange marshmallows on top of sweet potatoes.
6. Put in oven and bake till marshmallows are melted and beginning to turn light brown.
7. Serve hot.
