The secret ingredient in this Irish soup is...oatmeal! You don't really taste it, but it is what thickens the soup. It is delicious and talk about good for you!!
Ingredients:
2 tbsp. butter
1 onion, finely choppped
1 celery stick, finely chopped
1 carrot, finely chopped
1/4 cup plain flour
4 cups chicken stock
1/4 cup oatmeal
4 oz. spinach, chopped
2 tbsp. cream
salt and pepper
Directions:
1. Melt the butter in a large saucepan. Add the onion, celery and carrot and cook for about 2 minutes until the onion is beginning to soften.
2. Stir in the flour and cook gently for a further minute stirring constantly. Pour in the chicken stock, bring to the boil and cover. Reduce the heat and simmer for 30 minutes until the vegetables are tender.
3. Stir in the oatmeal and chopped spinach and cook for a further 15 minutes, stirring from time to time.
4. Stir in the cream and season well.
