Irish Vegetables (Diabetic)

From the The Complete Diabetic Cookbook by Mary Jane Finsand. You can either simmer the veggies or steam them.
Ingredients:
1 bay leaf
1 cup water
2 tablespoons wine vinegar
1/2 cup corn
1/2 cup broccoli floret
1/2 cup carrot
1/2 cup cauliflower floret
1/4 cup pimiento, chopped
salt (optional)
fresh ground pepper
Directions:
1. Combine bay leaf, water, wine vinegar in medium saucepan.
2. Bring to a boil.
3. Either add vegetables to the water and simmer until vegetables are tender.
4. OR
5. Place vegetables in a steamer basket, cover, and steam vegetables until tender.
6. If you simmer, drain, remove bay leaf.
7. Add salt and pepper.
