Irish Stew in a Crock

I made this for the first time on St. Patrick's Day 2007 ......... I'll make it again next St Patrick's Day - or sooner!
Ingredients:
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
2 lbs beef, cut into 2-inch cubes
1 1/2 cups tomato sauce
1 cup beef broth
1/2 cup red wine
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup finely chopped fresh parsley
1 bay leaf
3 large potatoes
3 large carrots
3 onions
3 stalks celery
Directions:
1. Heat butter & oil in a heavy skillet; brown beef cubes & transfer to crockpot.
2. Add liquids & seasonings.
3. Cut veggies into chunks and add to the crockpot.
4. Cover & cook on low for 9 hours; thicken sauce with cornstarch, if necessary.
