Hey its the top of the Irish to ya!! Happy St. Patty's Day so to celebrate here is my favorite Irish Soda Bread recipe - you can always eliminate the raisins if so inclined or you could add a hint of citrus bitters to it instead - any which way its still good! Read more !!!
Ingredients:
4 cups all-purpose flour
1/2 cup (1 stick) plus 1 tablespoon butter, melted
2/3 cup sugar
1 cup raisins
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs, beaten
2 cups milk
Directions:
1. Preheat the oven to 350 degrees F. In a large bowl, combine all the ingredients except 1 tablespoon butter; mix just until moistened. It is important not to overwork this dough as it will only get tough. Shape into a round ball
2. Place in a greased 9-inch round baking pan and bake for 1 hour or until a knife inserted in the center comes out clean. After removing from the oven, brush the top with the remaining 1 tablespoon melted butter.
3. NOTE: This is best served right from the oven, but you can rewarm it in a 200 degree F oven for 10 minutes before serving, and yes, I suggest brushing the top with a bit more melted butter at that time
