Irish Brown Soda Bread

Ingredients:

  • 2 cups (8oz) plain white flour
  • 2 cups (8oz) brown (wholemeal ) flour
  • 2 tsp bread soda
  • pinch salt
  • 285 ml (1/2 pint) milk

Directions:

  1. Preheat oven to 200 C, 200 F or Gas mark 6
  2. Sieve plain flour, bread soda & salt into bowl. Add Brown flour and mix well with hands
  3. Make a hole in the middle and add the milk. Mix with wooden spoon adding more milk if required. TIP: best to add milk bit my bit than in one go
  4. Sieve some flour on a table and empty bread dough onto it
  5. Knead dough for a few minutes and finally make a circle of the mixture.
  6. Mark dough with a cross
  7. Sieve flour onto baking tray and cook bread in preheated oven for 30 minutes
  8. When taking out of oven wrap in a tea towel until cool enough to eat
  9. Serving suggestion
  10. Eat with Irish salted butter and fresh smoked salmon
  11. Also serve with my potato leak soup (see other recipe)
